Justabout Red Varietals
At Justabout Winery, all of our red wines are aged in new, first-run American oak barrels, with varied toast levels depending on the grape variety. Our Merlot is aged in a heavy toasted barrel; the Sangiovese is aged in a light-medium toasted barrel. The wines are allowed to age cave-style where winter temperatures were held above 56° F and summer temperatures were kept below 75° F.
Each wine is encouraged through a natural malolactic (secondary) fermentation within the barrels, resulting in a lighter mouth and palate feel than an induced secondary fermentation. We employ a time-honored tradition for clarifying and settling each batch, rather than filtering our wines. As a result, our wines may have a bit of sediment in the bottom of the bottle. Not filtering ensures that our wines contain all their intended flavor and they possess the best ability to age well.
